This is a wannabe frittata because I didn't add cheese nor did I bake this dish and it could be called an omelette except that there's more kale than egg. I found this dish incredibly tasty and stir frying the kale will eliminate any bitterness that is inherent in the veg.
This recipe serves 1.
Ingredients:
1 clove of garlic, minced
3 kale leaves, chopped
5 cherry tomatoes, halved
100g sliced beef (meant for stir frying or shabu shabu)
2 eggs
1 tbsp milk
salt & pepper to taste

Method:
- Heat up the oil and fry the garlic until golden brown
- Add in the beef and kale, stir frying until the beef is half cooked
- Add in the tomatoes and stir; organise the veg and meat mix into a pancake-like circle in your frying pan
- Crack the eggs into a bowl and mix, adding in the milk as well as salt and pepper
- Pour the egg mixture into the middle of the veg 'pancake'. The egg mixture should start to ooze to the sides
- Let the egg cook a little before flipping the pancake onto its other side to cook for a further minute (you can do the flipping in sections)
- Once the beef is thoroughly cooked, serve the wannabe frittata
