It's a Saturday, it's lunch time and I'm feeling too lazy to go downstairs to buy food back while also feeling guilty for skipping Pilates this morning. So what do I whip up for lunch? A healthy meal of Spaghetti with slices of salmon belly, diced tomatoes and an avocado. Yes, it's an oily dish but it's all essential fatty acids! It may seem a bit weird
Ingredients:
1 avocado, diced
5 cherry tomatoes, halved OR 1/2 large tomato, diced
5 slices of salmon belly OR smoked salmon/ salmon fillet
1 clove garlic, minced
enough spaghetti for 1 person
salt & pepper to taste
optional - slice of lemon
Method:
- Boil your spaghetti according to the manufacturer's instructions till it's al dente. Keep 2 ladles of the pasta water.
- Fry the garlic till it's golden brown before adding in the salmon slices and tomato. Once the salmon is half cooked, add in the pasta water and bring it to a slight boil. This is to create a bit of sauce. Add in the salt and pepper now.
- Add in the spaghetti and toss in the avocado. Toss until the salmon is cooked.
- Serve with a squeeze of a lemon slice.
