I know, the photo isn't the most appetising but it was really quite yummy. This is my idea of a healthy dinner which is full of Omega-3 fatty acids, iron and vitamins. Quite quick to prepare too!
You'll need:
- Slices of Salmon Belly (substitute with fillet if you must)
 - Half a packet of shimeiji mushrooms (or button)
 - 2 rashes of bacon
 - half a cup of baby peas
 
- If you're using frozen peas like I did, microwave them covered on HIGH for 2 mins
 - While the peas are in the microwave, heat up a frying pan and when hot, pan fry the bacon until the oils are released
 - Set the bacon aside. The peas should be done now. Toss the peas in the frying pan with the bacon oil for about a min.
 - Take the peas out and mash them lightly
 - In the frying pan, sear the salmon belly fillets, skin-side first
 - When the salmon skin gets a bit crispy, flip and cook it until your preferred doneness
 - Remove salmon from the pan. There should be a lot of oil in the pan by now and it's all good oils!
 - Toss in the mushroom. Add salt and pepper to taste. Cook until the mushrooms go a bit soft and moisture from the mushrooms are released into the pan.
 - Serve!
