Spaghetti with Salmon Belly, Tomatoes & Avocado


It's a Saturday, it's lunch time and I'm feeling too lazy to go downstairs to buy food back while also feeling guilty for skipping Pilates this morning. So what do I whip up for lunch? A healthy meal of Spaghetti with slices of salmon belly, diced tomatoes and an avocado. Yes, it's an oily dish but it's all essential fatty acids! It may seem a bit weird

Ingredients:
1 avocado, diced
5 cherry tomatoes, halved OR 1/2 large tomato, diced
5 slices of salmon belly OR smoked salmon/ salmon fillet
1 clove garlic, minced
enough spaghetti for 1 person
salt & pepper to taste
optional - slice of lemon

Method:
  1. Boil your spaghetti according to the manufacturer's instructions till it's al dente. Keep 2 ladles of the pasta water.
  2. Fry the garlic till it's golden brown before adding in the salmon slices and tomato. Once the salmon is half cooked, add in the pasta water and bring it to a slight boil. This is to create a bit of sauce. Add in the salt and pepper now.
  3. Add in the spaghetti and toss in the avocado. Toss until the salmon is cooked.
  4. Serve with a squeeze of a lemon slice.
If you don't have salmon, feel free to substitute it with prawns or any kind of seafood. It's quite light and refreshing!
