I'm excited! Are you? And what better to celebrate the yuletide with some yule cakes? <a href="www.pgcake.com" target="_blank">The Pine Garden</a> has just released three new festive seasonal flavours for their logcakes - <b>Yakult Soju</b>, <b>Beetroot Ruby Chocolate Ripple</b>, and <b>Hojicha Mochi (reduced sugar)</b>. Fret not, they still have their classic favourites such as the Lychee Martini and Black Forest as well as the exquisite selections such as the Hazelnut Chocolate Crunch, Mango Pomelo Sago, Sweet Peach Early Grey and Kopi Cat Mountain King Durian. </p><p>The new flavours were inspired by three different countries and since we can't travel this year, we might as well travel with our palettes! We managed to get our hands on some of these cakes and here's the important taste test!</p><h3 style="text-align: left;">Yakult Soju Log</h3><div>As seen in the picture above, this logcake is snowy white and was inspired by the chefs' favourite probiotics drink and the sweet Korean liquer. It's creamy and I liked that there were little bites of gummies in between the swirls. However, I couldn't really taste the tanginess of the Yakult nor the punch of soju. But...I have to discount the alcohol part because I usually can't taste any alcohol unless it's above 5%. Now, I've heard of beetroot juice being used as a food colouring for Red Velvet cakes so I was a little intrigued but not too surprised when I saw this. However, as you can see from the side view, there are chunks of beetroot inside the cake too and I LOVED it! The beetroot cubes were sweet and didn't have the raw vegetable flavour, which added a bit more texture to the soft cream and chocolate sponge. </div><div><br /></div><div>The chocolate sponge is made with pink ruby chocolate, which was why the cake was a bit dense but still moist and had a slight fruity tangy flavour. I also loved the contrast with the layer of pink cream outside, which I guess is coloured with beetroot juice, that also brought out the mild red colour of the pink ruby chocolate. Yay to antioxidants! Yes...any excuse to eat dessert. Hojicha is roasted green tea and it has been trending since late last year outside of Japan, often being drunk as an after-dinner drink.</div><div><br /></div><div>Which is why I like this logcake the best. The subtle smoky taste of the hojicha worked so well with the chewy mochi, which gave a bit of interesting mouthfeel as you take each bite. And who likes the sugar crash? </div><div><br /></div><div>That is why I decided that while I wanted something sweet, I'm gonna add protein to my pancakes so that I will still feel full till lunch or even tea time! </div><div><br /></div><div>Once again, my recipe below is not completely accurate because my pancake/waffle mix had ridiculous instructions (500g of waffle mix to how much water??? Who makes that much waffles at home?). Thus, please also use your wise judgement and adjust the amount of water accordingly. </div><div><br /></div><div>This recipe serves two to three persons. </div><div><br /></div><div><u>Ingredients:</u> </div><div>2 bananas, sliced</div><div>1 cup pancake mix</div><div>1 egg</div><div>1 cup protein powder (use vanilla or cinnamon flavoured)</div><div>1/2 cup cocoa powder</div><div>1 cup milk/plant-based milk/ water</div><div><br /></div><div><u>Method:</u> </div><div><ol style="text-align: left;"><li>Mix together the pancake mix, egg, protein powder, cocoa powder. Slowly add in the milk and stir until you get a smooth and thick mixture. It should be thick enough to coat your whisk and drip slowly. You may or may not use up all the milk to get that consistency.</li><li>Stir in half of the sliced bananas.</li><li>Heat up your pan and ladle in your pancakes according to the size that you prefer.</li><li>Once you see the bubbles formed and the pancake has gone matte, flip it over to cook the other side for another minute or two.</li><li>Placed the cooked pancakes on a plate, top it off with the other half of the sliced banana and drizzle some maple syrup. Enjoy!</li></ol><div>Do note that these pancakes are very dense due to the protein powder. I wouldn't recommend eating more than 2 pancakes per person.</div></div><div><br /></div><div>If your cocoa powder is sweetened, you may want to lessen the amount used so that you don't have a sugar bomb. It also just so happens that I have a bag of Pink Lady apples in the fridge. Hence, I made myself French Toast with Apple Sauce. I'm so sorry that my measurements below aren't exact...because I belong to the school of approximation! Or in Singlish, we call it agar-ration. As such, you might want to adjust according to your taste.</p><p>My recipe below makes 4 toasts and takes about 30 minutes to prep and cook.</p><p><u>Ingredients (for the toast):</u><br />3 eggs<br />1 tsp cinnamon<br />100ml milk/plant-based milk of your choice<br />4 tbsp sugar<br />4 slices of bread (I used multi-grain here but feel free to use white or even sourdough</p>
<p><u>Ingredients (for the apple sauce):</u><br />2 apples, skinned and cubed<br />butter<br />1 tsp cinnamon<br />5 tbsp brown sugar (I used gula melaka for a local twist)</p><p><u>Method:</u> </p><p></p><ol style="text-align: left;"><li>Whisk the eggs, cinnamon, sugar and milk together until all the sugar has been dissolved.</li><li>Heat a pan up and lightly oil it. While the pan is heating, soak your pieces of bread in the egg mixture. It helps if you transferred the egg mixture to a plate so that it's easier for the bread pieces to soak up the egg mixture on both sides.</li><li>When the bread has soaked up the egg mixture and the pan is hot, fry the bread pieces for about 2 minutes on each side or until the egg is thoroughly cooked. Be careful, don't burn the pieces. You may want to turn down the heat a little when frying up the bread.</li><li>Once your toasts are all done, you can use the same pan for the apple sauce! Melt enough butter to be able to cook the apple cubes.</li><li>Once the apples are slightly browned, add in the sugar, cinnamon and a bit of water to be able to further cook the apples down till it's soft but there is a syrupy sauce. This should take about 5 minutes.</li><li>Serve the apple sauce over the toasts and enjoy!</li></ol><div>I used Pink Lady apples but you can use any red apples. If you're using Fuji apples, please reduce your sugar and do note that it'll cook a lot faster. On the opposite end, if you're using a tart apple such as a Granny Smith, you will need to add in more sugar and water while allowing it to cook a bit longer. For me, Pink Lady is in between tart and sweet while still retaining a strong apple flavour after cooking.</div><div><br /></div><div>Other variations:</div><div>Feel free to add in nutmeg into the egg mixture for the toast. If you want it to have a slight Indian flavour profile, you might want to add in a pinch of ginger and cardamom as well. </div><div><br /></div><div>If you find that your apple sauce is at the consistency that you like but it's not sweet enough, then add in a teaspoon or two of honey. If it's not thick enough but it's too sweet, add in a pinch of salt and a teaspoon of cornstarch to thicken it. I found that my collagen powder also helps a little in thickening the sauce.</div><div><br /></div><div>Feel free to sprinkle nuts or shredded coconut to make it even more decadent! </div><div><br /></div><p></p>

I got it from <a href="https://www.skinnytaste.com/prosciutto-wrapped-figs-with-blue-cheese/" target="_blank">Skinny Taste</a> and the only differences are that I didn't use any toothpicks to secure the prosciutto to the figs and I drizzled the figs with maple syrup after.</p><p>I have to say that I really loved this recipe because it's simple, easy to assemble and is perfect for those times where you're hungry but yet not hungry enough to finish off a full meal. I would've eaten this with arugula salad and balsamic vinegar but I didn't have any salad left so it was just the figs for me. Anyway, to the recipe:</p><p><u>Ingredients:</u> </p><p></p><ul style="text-align: left;"><li>Figs</li><li>1 slice of prosciutto ham for every fig</li><li>Blue cheese</li><li>Maple syrup (optional)</li></ul><div><u>Method:</u> </div><div><ol style="text-align: left;"><li>Slice the figs into halves but do not cut all the way through</li><li>Stuff the middle of the figs with a bit of blue cheese. I wouldn't recommend putting too much as blue cheese is quite salty and pungent</li><li>Wrap each fig with a slice of prosciutto. You may want to use toothpicks to secure them but I found that they were already 'sticky' enough to hold themselves together</li><li>Air fry them for 6 min at 180<sup>0</sup>C</li></ol><div>The reason why I used maple syrup as a dressing is because the prosciutto and blue cheese are quite salty and if your figs aren't very sweet, it'll be overpoweringly salty. But if you're eating the figs with a salad, the salad itself will balance the flavours and the balsamic vinegar will be a better dressing option.</div></div><div><br /></div><div>Variations: swap blue cheese with any other hard and sharp cheeses; swap the prosciutto with bacon. </div><div><br /></div><div>Do note that for every variation, the flavour profile will also change. How adorable is this stack of drawers that houses the mooncakes? It definitely is reusable for knick-knacks such as keys, nail polish or haberdashery items. </p><p>Each drawer slides out to reveal the mooncakes made in foodpanda's signature pink (yay, my favourite colour!) with the cutest panda logo embossed! It would've been better if each box of mooncake had the flavour labeled on it but then again, if you're like me, you'll be busy cutting into each mooncake to taste them immediately and guessing the flavours isn't that difficult thanks to the distinct colours of the ingredients.</p><h3 style="text-align: left;">Tasting the mooncakes</h3><div>Nonetheless, the taste of these snowskin mooncakes is of utmost importance and I have my expectations up since this is produced not just by foodpanda but with Hai Tien Lo in Pan Pacific. </div><div><br /></div><div>My first advice to those who are getting this mooncake is to put it immediately in your fridge for an hour if you want to consume it within the day. Otherwise, stick it in your freezer and defrost it in your fridge before eating it. When I received my box, some of the mooncakes were a little too soft and some liquids were oozing out out the plastic cases that each mooncake was in.</div><div><br /></div><div>Do also note that because the mooncakes do not have any preservatives, they're best consumed on the day itself or within 3 days.</div><h4 style="text-align: left;">Hazelnut Yuzu</h4><div>I love the burst of refreshing yuzu on the first bite plus the little crunches of hazelnut and what I think are mini chocolate balls. Don't expect the outer mousse (I'm guessing this) layer surrounding the yuzu centre to taste like Nutella. While it was a tad chocolatey and had hazelnut, it did not taste as strong as Nutella. As such, the yuzu is the star of this mooncake. </div><h4 style="text-align: left;">Raspberry Chocolate</h4><div>This was my favourite out of all the mooncakes and this was not expected at all! It tasted like a chocolate mousse with raspberry coulis that you can eat without a spoon. As such, it tasted the most luxe out of all the other flavours and similar to the yuzu, the raspberry added a refreshing tartness to the mooncake so that it doesn't feel heavy at all. The snowskin was a bit of a letdown to the whole mooncake as it was a tad too thick and tasted rather doughy. I reckon that this mooncake would've tasted better if it was covered in a chocolate casing instead.</div><h4 style="text-align: left;">Matcha Black Sesame</h4><div>This was one of the flavours that I really wanted to try because it is a combination of two flavours that I like and I know would go together in a subtle way. Because there's no tartness in this mooncake, it naturally tasted a bit heavier on the palate compared to the Hazelnut Yuzu and Raspberry Chocolate. This is possibly why the skin used for these mooncakes tasted the best with this combo. Nonetheless, the filling was more like a mousse than a paste so it was still relatively lighter than other mooncakes.</div><h4 style="text-align: left;">Soursop Lychee</h4><div>This was the other flavour that I was really looking forward to because I could imagine the fruits combining into a wonderful amalgamation encased in snowskin. However, this mooncake also turned out to 'leak' the most liquid, which turned into a soppy mess when I was cutting it. I liked that I could see the lychee bits in the mousse-like filling but the flavours were kind of overpowered by the taste of the snowskin.</div><h3 style="text-align: left;">Overall</h3><div>I love snowskin mooncakes so the skin used in these mooncakes were a disappointment. Especially since I have eaten Hai Tien Lo's other concoctions before. Nonetheless, it was the only letdown because I really liked that it is so cute, and the fillings were light, non-traditional and refreshing. <td style="width: 40%;">I'm usually not a fan of traditional baked mooncakes because the crust may end up being too dry but MX's mooncakes did not have a dry crust! However, the baked skin was a bit oilier than the version without the egg yolk and as such, the top of the mooncake was a bit squished and I couldn't see the words.<br /><br />I think one would be surprised that these mooncakes are low sugar (containing only 5% of the usual amounts) because they're really sweet enough. I quite like the mix of sweet with a slight savoury twist from the salted egg yolk too.</td>
<td style="width: 40%;">The pine nuts add a bit of crunch into the otherwise super smooth lotus paste.<br /><br />The crust is not dry but noticeably less oily than the version with the egg yolk. But as a result, the lotus paste was bit more cloying to the mouth. Still delicious nonetheless.<br /><br />Again, I was pleasantly surprised that this was low in sugar because it tastes almost like a full sugared version.</td>

<td style="width: 40%;">I personally love traditional baked mooncakes. To be honest, when I first heard about low sugar alternatives, I was sceptical. <br /><br />However, MX's mooncakes completely amazed me. Among the mooncakes I have tried this year, theirs would have to be the moistest of them all.<br /><br />While I did notice an oilier yolk (resembling a <i>liu sha bao</i>), I was still impressed by the smooth white lotus paste. For a low sugar alternative, it did not lose out on taste. I thoroughly enjoyed the balance of the sweet lotus paste and savoury egg yolk. And this time, without the awful sugary taste that tends to linger in the mouth! </td>
<td style="width: 40%;">Like the traditional baked mooncake, the lotus paste in this one was luscious and had the right amount of sweetness.<br /><br />I never understood the appeal of plain mooncakes without egg yolks. Most of them I have tasted tend to be dry, or have overpowering ingredients added to them. But I am converted after tasting this one. <br /><br />The addition of the pine nuts was a smart one. It added a nice nutty taste and layer of texture that complemented the sweet lotus paste. Overall, it tasted extremely fresh and light, like it had just been taken out of the oven. </td>

I have to admit that I'm biased towards the snow skin mooncakes, which was why I tried these two out first. What I've always liked about The Pine Garden is how their mooncakes are still handmade from recipes passed down by top Hong Kong chefs since 1984. Valuing tradition, the mooncakes are still made with wooden moulds and are also rested on wooden platforms so that the natural flavours and oils from the paste can be infused onto the skin of the mooncake to elevate the aromas.</div><div><br /></div><div>Nonetheless, the taste is still of utmost importance and here's our review.</div><div><br /></div>

<td style="border: 1px solid black;">I was looking forward to this because I loooove black sesame. But alas, it was a tad disappointing. The mochi didn't make cutting through the mooncake easy and the texture of it all was the same - soft. <br /><br />My suggestion is to have a black sesame tang yuan in the centre instead. So that you still have a slight chewiness from the mochi layer but an oozing surprise in the middle to add an extra black sesame fragrance.</td>

While chewing, I really liked the texture of the grains inside, which was slightly chewy but not tough. I was also pleasantly surprised that the mooncake wasn't too sweet. </td>

I was inspired by Starbucks for this drink and I figured that I could make this at a fraction of the price since I had all the necessary ingredients! Best part? I know that everything that went into this drink was 100% natural and low in sugar. I've made a few batches of this so far and one of my friends inhaled this drink the last time she came over. Definitely a very fruity and refreshing drink to cool one down during the current hot period!<div><br /></div><div>The recipe below makes for about 1.5 litres.</div><div><br /></div><div><u>Ingredients:</u> </div><div><ul style="text-align: left;"><li>1 litre of green tea (you can use Japanese or Chinese green tea, whichever you prefer)</li><li>½ lemon, juiced</li><li>2 tbsp honey </li><li>100g frozen strawberries (about 1 cup)</li></ul><div><u>Method:</u> </div></div><div><ol style="text-align: left;"><li>Mix the green tea with the lemon juice and honey.</li><li>Blend the frozen strawberries with a cup of the green tea lemonade. You should get a smoothie of sorts.</li><li>Pour the smoothie into the rest of the green tea lemonade. Stir and serve.</li></ol>You can see from the photo above that I added yuzu into my mocktail as well. However, I found that it didn't really add any distinct flavour so you need not add it in. If you want to turn this into a cocktail, I would recommend adding more honey and then mix in a white liquor such as vodka or soju into it. If you'd like it bubbly, sparkling wine also mixes well. I honestly did not set out to make mango salad but my online grocer sent me 2 unripe mangoes and I didn't realise that before putting them into the fridge. As such, they never got the chance to ripen and when life gives you unripened mangoes, you make mango salad!<div><br /></div><div><u>Ingredients:</u> </div><div><ul style="text-align: left;"><li>1 unripe mango</li><li>1 red chilli</li><li>1 shallot</li><li>1 tbsp light soy sauce</li><li>½ tbsp sugar</li><li>1 tbsp fish sauce</li><li>1 tbsp vinegar or lemon juice</li><li>3 tbsp crushed peanuts</li><li>1 tsp sesame oil</li></ul><div><u>Method:</u> </div></div><div><ol style="text-align: left;"><li>Cut the mango into thin, matchstick-like pieces.</li><li>Slice the shallot into thin slices.</li><li>Slice the chilli into slices. If you want it to be spicier, leave the seeds. If you don't want it too spicy, remove the seeds.</li><li>Put all the ingredients, except the peanuts, into a bowl and mix well. Let it sit for about 1 hour before you top it off with the peanuts and serve.</li></ol>When I made this, I didn't have any fish sauce so how do you make up for that? You will need to increase the amount of soy sauce to 2 tablespoons and then add in about 10 dried shrimps. This needs to sit for longer than an hour for the flavour of the dried shrimp to finally come out. Feel free to substitute the sugar with sugar alternatives such as stevia or honey. Upon cutting it or taking a bite, it should still hold its shape to a decent extent. You'll need to be able to see the layers. As for the taste, it should be buttery but not very oily. <br /><br />Best example: Tiong Bahru Bakery's croissants</td></tr><tr><td style="min-width: 60px;"> <b>Pass</b></td><td style="min-width: 60px;">Decently flaky and buttery, with a slight crisp on the outside. May or may not hold its shape after cutting or taking a bite but still tastes buttery without it being too oily. Layers can still be seen.<br /><br />Best example: Delifrance's croissants</td></tr><tr><td> <b>Fail</b></td><td>Anything that doesn't fulfil the 'pass' category. <br /><br />Best example: Provence's mini croissant. Those aren't croissants. Those are bread rolls masquerading as croissants. </td></tr></tbody></table><br /></div><div>Croissants are not the easiest make. Which is why they cost a pretty penny each. But it is worth the pretty penny you pay once you've tasted a really good one. So how do HEYTEA's Golden Croissant and Chocolate Croissant fare?</div><div><br /></div><div>Fail.</div><div><br /></div><div>I'm sorry HEYTEA. While your croissants were crispy on the outside and I could see some layers, the bite was a bit chewy. Moreover, it tasted very oily as an aftertaste. This oily aftertaste was masked in the chocolate version (and the chocolate itself was ok). Alas, decent croissants they are not. You can taste that they used good chocolate and the dark and the milk chocolate were well balanced. I do recommend eating this fresh or slightly warm. I was afraid of it being too sweet but I think they got the right balance of sweet and a bit of savoury from the butter. Because this may get too sweet, you will want to pair it with something fruity such as the Very Grape Cheezo. I chanced upon this at Cold Storage the other week and I couldn't resist it because it's a limited edition drink and it's Hello Kitty! So cute! I was also intrigued with the "Apple Pie A La Mode" flavour. <div><br /></div><div>Young Master Brewery started in Hong Kong in 2013 and they regularly come up with limited flavours where they self-distribute in Hong Kong as well as Singapore. </div><div><br /></div><h3 style="text-align: left;">Taste test</h3><div>The Apple Pie A La Mode is supposed to be an apple vanilla cream ale so I was expecting it to be a bit sweet, fruity with a creamy aftertaste. At first sip, it tasted like a very creamy beer and I was wondering what happened to the apple flavour. Then it came as an aftertaste. </div><div><br /></div><div>Now, I'm not into beer but I do appreciate a lychee or berry beer once in a while. Young Master, you may have successfully lured me in with Hello Kitty and a dessert-named flavour but you have not won me over with the taste. It is a decent beer but...it failed to deliver apple pie-ness. </div><div><br /></div><h3 style="text-align: left;">Where to get it</h3><div>You can try out the Young Master x Hello Kitty at Cold Storage (S$7/can or S$10 for 2 cans). <li>1 avocado</li>
<li>1 lime or 1/2 lemon</li>
<li>1/2 onion, diced (optional)</li>
<li>1 tomato, diced (optional)</li>
<li>salt and pepper to taste</li>
</ul>

<li>Cut your avocado and remove the flesh. Smash the avocado in a bowl with a fork.</li>
<li>Add in the diced tomato and onion. </li>
<li>Squeeze in the juice of the lime or lemon into the bowl. Mix well.</li>
<li>Add in salt and pepper to taste.</li>
<li>Serve on top of your favourite chip, nacho or biscuit!</li>
