Grilled Salmon with Roast Potatoes and Hollandaise Sauce

So I had leftover hollandaise sauce from breakfast and because it was so good, I HAD to eat more food with it. The solution? Lunch.

I simply grilled 2 small pieces of salmon with a bit of paprika powder, parsley salt, pepper and drizzle of olive oil.

In the meanwhile, I also boiled 2 small potatoes, cubed them once they're cooked and added to the same baking tray as my fish. I drizzled some olive oil and rosemary leaves on them.

Grill/bake/roast the salmon and potatoes in an oven until the salmon is done to your liking. I prefer mine 90% cooked. Drizzle hollandaise sauce over both the fish and potatoes before serving.

Simple and delicious!
